Cauliflower bechamel gratin
French style gratin with cauliflower and béchamel sauce
- Prep time: 30 minutes.
- Cook time: 20 minutes.
- Servings: 6.
Ingredients
- 50g + 20g butter.
- 50g flour.
- 75cl milk.
- 1kg cauliflower.
- chives.
- ham (optional).
- 70g shredded cheese.
Directions
- Chop cauliflower in small pieces.
- Cook 15 minutes in boiling water. Keep warm.
- Melt 50g butter in sauce pan.
- Pour flour and mix until homogeneous (a “roux”).
- Pour milk, add salt and pepper and cook while slowly stirring until the sauce thickens.
- Let the sauce simmer on low heat for another 10 minutes.
- Turn off heat, add cauliflower, half the cheese, chives and optional diced ham, stir well.
- Pour the preparation into an baking dish.
- Spread remaining cheese and butter on top.
- Bake for 20 minutes at 240C.
