Cauliflower bechamel gratin

French style gratin with cauliflower and béchamel sauce



  1. Chop cauliflower in small pieces.
  2. Cook 15 minutes in boiling water. Keep warm.
  3. Melt 50g butter in sauce pan.
  4. Pour flour and mix until homogeneous (a “roux”).
  5. Pour milk, add salt and pepper and cook while slowly stirring until the sauce thickens.
  6. Let the sauce simmer on low heat for another 10 minutes.
  7. Turn off heat, add cauliflower, half the cheese, chives and optional diced ham, stir well.
  8. Pour the preparation into an baking dish.
  9. Spread remaining cheese and butter on top.
  10. Bake for 20 minutes at 240C.
